Roasted vegetables

Serves 4

4 potatoes
1 medium onion
2 green peppers
1 aubergine
2 courgettes
2 carrots
Heat the oven to 180C
Chop the aubergine into 1-cm cubes and sprinkle with salt
Chop all vegetables into 1-cm pieces
Peel the potatoes and carrots
10 black peppercorns
1 dried chilli
1 tsp mixed herbs
Grind the peppers and chilli
2 tbsp olive oil
Heat the olive oil in a pan
Put the vegetables in
Speinkle pepper, chilli and mixed herbs on vegetables
Stir vegetables every minute or so
When starting to brown, put in oven for 20 minutes
Sprinkle with parmesan
Serve
25 g grated parmesan
